375g ramen noodles
I just wanted to say that there’s really nothing I can formulate through words that could possibly come close to how much I appreciate you and love you. From day one, even beyond being my boyfriend, you have always been a big portion of myself as one of my best friends; always teaching my younger self how to survive in the adult world along with the other dweebs. I might’ve been an annoyance being so young and immature, but you continued to believe in me with the loving heart you’ve always held behind closed doors and behind the spotlight. You’ve never belittled me whether it be my irrational fears or my mental breakdowns when I found myself faltering under expectations of what I assumed to be others when they were simply my own demons taunting me. The humble you has always told me not to thank you for the bare minimum, but I only show gratitude since being able to grow alongside with you, I’ve witnessed others who lacked the gift of compassion and integrity, which in turn I was the target multiple times; however, even at your worst, and even at the times I might’ve made you upset, you’ve never put me below you to make yourself feel better. You have always been my home; the campfire in the peak of winter near Christmas under the moonlight when my bones feel like shattering from numbness; the alternative Busan despite you being my loving Daegu boy in the middle of Seoul. I could sit here and take apart a toilet paper to write all my words (because loose leaf), but I, Jeon Jungkook, am too emotionally constipated for that — but for now, this is all I can say in this moment. I love you, hyung. I hope you’re sleeping well.
400g sliced cooked pork or chicken
2 tsp sesame oil
For the garnish
100g baby spinach
4 tbsp sweetcorn
4 boiled eggs, peeled and halved
1 sheet dried nori, finely shredded
sliced green spring onions or shallots
sprinkle of sesame seeds
Method
Mix 700ml chicken stock, 3 halved garlic cloves, 4 tbsp soy sauce, 1 tsp Worcestershire sauce, a sliced thumb-sized piece of ginger, ½ tsp Chinese five spice, pinch of chilli powder and 300ml water in a stockpot or large saucepan, bring to the boil, then reduce the heat and simmer for 5 mins.
Taste the stock – add 1 tsp white sugar or a little more soy sauce to make it sweeter or saltier to your liking.
Cook 375g ramen noodles following the pack instructions, then drain and set aside.
Slice 400g cooked pork or chicken, fry in 2 tsp sesame oil until just starting to brown, then set aside.
Divide the noodles between four bowls. Top each with a quarter of the meat, 25g spinach, 1 tbsp sweetcorn and two boiled egg halves each.
Strain the stock into a clean pan, then bring to the boil once again.
Divide the stock between the bowls, then sprinkle over 1 shredded nori sheet, sliced spring onions or shallots and a sprinkle of sesame seeds. Allow the spinach to wilt slightly before serving.
