  ・ ʙʀɪᴇғ ᴅᴇsᴄʀɪᴘᴛɪᴏɴ: being among the thousands of zainichi koreans whose ancestors stayed in japan after the war, darien’s family emphasized the importance of exploring the unknown. understanding various languages and communicating with others whose culture is different from yours is a privilege. that asset would not go to waste. instead of going to a traditional school in the neighborhood, the aspiring chef was enrolled in an international primary school in kyoto, then years abroad in the united states to finish the rest of his essential education. he does not go by his birth name, legally changing it once he went to live alone in new york. darien took an interest in culinary school in the states, attending a program to give him his associate degree in culinary arts and flying back to kyoto once the death of his grandpa shook the family structure. the cuisine was a way to preserve their culture and thus, he embellishes korean elements in every dish he serves in some way and somehow.
