Hogwarts university offers a world class education system like no other; as the pioneers of magical ingenuity and advancement, we offer classes in several areas of magic to help guide your future career path, whatever it may be.  Note that these are the higher level equivalent to the classes younger wizards should have taken during their previous seven years.

first - second year
All first-years at Hogwarts must take seven (7) core subjects.  think of these as the "general education" requirement for graduation. 
Astronomy
the branch of magic and science that studies stars and the movement of planets
charms
specialises in the teaching of charms.
Defence Against the Dark Arts
the study of how to defend themselves against all aspects of the Dark Arts, including dark creatures, curses, hexes and jinxes (dark charms), and duelling.
Herbology
the study of magical and mundane plants and fungi.  The study of how to care for and utilise plants, learn about their magical properties and what they are used for.
History of Magic
lectures on the History of Wizards and the Magical World.
Potions
students learn the correct way to brew potions.  They follow specific recipes and use various magical ingredients to create the potions, starting with simple ones and moving to more advanced ones as they progress in knowledge.
Transfiguration
teaches the art of changing the form and appearance of an object or a person.

third - fourth year
third and fourth years are the years when students begin to delve into the special curriculum.  think of these classes as an opportunity to dip your toe into the classes required for your major / career.  these classes will be the entry-level, prerequisite classes.  students will need to take a total of five (5) prerequisite classes and two (2) electives.

examples of courses students will be able to take are listed below.  keep in mind that this is not the full list.  if there is a class you want to take that is not listed below, talk to your counselor for advising here
arithmancy
is a magical discipline that studies the magical properties of numbers, including predicting the future with numbers and numerology.
muggle studies
involves the study of the history and daily lives of Muggles, and how they are able to live without magic, but instead electricity, technology and science.
divination
teaches methods of divining the future, or gathering insights into future events, through various rituals and tools.
study of ancient runes
the study of runic scriptures, or Runology.  Ancient Runes is a mostly theoretical subject that studies the ancient runic scripts of magic.
care for magical creatures
students learn about a wide range of magical creatures.  Students are taught about feeding, maintaining, breeding, and proper treatment of these creatures and many more.

fifth year
During fifth year, students have an appointment with their head of house to discuss which job they would like to go into, the teacher will recommend any specific subjects for N.E.W.T. (nastily exhausting wizarding tests) level required for this job, taking into account predicted O.W.L. (ordinary wizarding levels) grades based on current performance.

The teacher may recommend subjects based on the student's current grades if the student is unsure of what job they would like.  These students make provisional choices for N.E.W.T.s at this time and their choices are confirmed or rejected depending on their achieved O.W.L grades or the demand.

with that said, students will continue to take their required prerequisite classes.

sixth - seventh year
students don't know what their classes for sixth year will be until after they receive the results of their o.w.l.s. once they have their results, the students know whether they have achieved the required grades to get into the classes they're interested in for sixth year.

on the first day of term, each student meets with his or her head of house to determine which classes he or she can take. if the student did not pass an o.w.l., he or she discusses options with the head of house. 

Students are required to a minimum of five (5) subjects that were recommended by their head of house during their fifth year.  students may not elect to drop any classes at this time, as each class is crucial for the n.e.w.t.s that they will take at the end of their seventh year.  students must also have at least two classes of field work (i.e. shadowing someone in their chosen career).

advanced arithmancy studies
an advanced version of arithmancy.
alchemy
a branch of magic and an ancient science concerned with the study of the composition, structure and magical properties of the four basic elements, as well as the tranation of substances.
healing
a branch of magic that focuses on healing.  students will learn how to fix bones, close up cuts, etc.  this class is an example of what students need to take if they want to have a profession in healing.

extracurricular
Extracurricular subjects are entirely optional.  second years and up are permitted to enroll for extracurricular classes, should their hardworking selves allow for the extra workload.  if the a student's grades in their core and elective classes are failing, then they will be asked to drop an extracurricular, but only if it is early on in the year.

art
students paint, draw, and otherwise, depict artistic things of the wizarding world.
ghoul studies
it is assumed that students learn about ghouls in this class, and possibly other similar creatures.
magical theory
a subject taught to at least first years.  it presumably covers magic from a purely theoretical view, and magical theory by adalbert waffling may be a required textbook.
muggle art
students study and experiment with muggle artefacts, paintings, etc. 
muggle music
part of non-magic studies at hogwarts school of witchcraft and wizardry.
music
students are taught musical instruments and possibly sing in the frog choir. 
xylomancy
students learn about the "often overlooked" way of divination which often has something to do with twigs.
